Lighter tuna salad
This is a go to lunch for me, especially when I'm planning a more indulgent dinner. I was inspired by one of my favorite deli sandwiches, but this version is more vibrant. The lemon punches it up and herbs give it a zing of freshness.
Lighter tuna salad
Ingredients:
1 can water packed tuna (my favorite brand is wild planet), drained
2 celery stalks, diced
3 or so banana peppers, diced
1 small shallot, finely chopped
A few sprigs of dill (to taste, a little goes a long way) Chives or parsley work if dill is not your jam
1.5 tbsp nonfat Greek yogurt
1 tsp Dijon mustard
Juice from half of a lemon
Romaine lettuce, for serving
Method:
Mix all the ingredients (except the lettuce) in a bowl, mashing the tuna with the tines of your fork to break it up a little. Season with salt and pepper to taste.
Pile onto lettuce cups and enjoy!
